- 6 slightly firm pears
- 5 cups water (1 ¼ L)
- 2 cups sugar (400 g)
- ¾ cup rum (180 mL)
- 1 teaspoon vanilla extract
- vanilla ice cream, to taste
- ⅓ cup melted dark chocolate (75 g)

Preparation
- Peel the pears and cut the bottoms out, but leave the stems intact.
- Mix the water, sugar, rum, and vanilla together in a large pot over medium heat. Add the pears, cover the pot, and simmer for about 40 minutes, turning occasionally, until the pears are soft and golden.
- Scoop out the pears and place upright on a serving dish. If desired, cook the poaching liquid a bit longer until syrupy, then ladle over the pears. Serve with vanilla ice cream and a drizzle of melted chocolate.
