- ¼ cup lemon juice (60 mL), + 3 tablespoons
- ½ cup olive oil (120 mL)

- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper
- ¼ teaspoon salt
- 2 tablespoons olive oil
- 1 skinless salmon fillet
- 2 tablespoons olive oil
- ¼ cup lemon juice (60 mL)
Preparation
- Make the parsley walnut pesto: In a small bowl, stir together the parsley, walnuts, garlic, pepper, lemon juice, and olive oil until fully incorporated.
- Make the salmon: In a small bowl, mix together the black pepper, cayenne, and salt. Rub the seasoning over the salmon fillet.
- Heat the olive oil in a large skillet over medium heat. Place the salmon in the pan, skin-side down. Cook for 5 minutes, then flip and cook for another 5 minutes
- Pour the lemon juice over salmon. Cook for 3 more minutes, until the lemon juice has reduced.
- Transfer the salmon to a plate and spoon the parsley walnut pesto on top. Serve immediately.
