Savory Sweet Potato Wedges

Ingredients

  • 1 sweet potato
  • 2 eggs

Garlic Parmesan Breading

  • 1 cup bread crumbs (115 g)
  • ⅓ cup parmesan cheese (40 g)
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper

Avocado Dipping Sauce

  • 1 avocado
  • ¼ cup greek yogurt (60 g)
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon lime juice
  • salt, to taste
  • pepper, to taste

Preparation

  1. Preheat oven to 375˚F (190˚C).
  2. Cut sweet potato into wedges. Set aside.
  3. Prepare breading mixture in a large bowl and set aside. Whisk 2 eggs in a separate bowl.
  4. Dip wedges, one by one, in the egg mixture followed by the breading mixture and place on a baking sheet lined with parchment paper.
  5. Bake for 30-35 minutes, or until golden brown. For best results, flip halfway.
  6. While wedges are baking, prepare the avocado dipping sauce by mashing the avocado with a fork until consistency is smooth and then adding the other ingredients. (You may also use a high speed blender or food processor.)
