Spiced Tomatoes

  • 1 pt Walmart Cherry Tomatoes (475 g), halved
  • 1 clove large garlic, minced
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground cumin
  • ⅛ teaspoon cayenne pepper, optional
  • ¼ teaspoon kosher salt
  • 1 tablespoon olive oil

Smashed Chickpeas

  • 1 can chickpeas, drained and rinsed
  • 1 teaspoon lemon juice
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 green onions, white parts only, finely chopped
  • 1 tablespoon fresh parsley leaves, chopped

Yogurt Sauce

  • 1 cup full-fat greek yogurt (240 g)
  • ½ cup cucumber, peeled and finely diced
  • 2 tablespoons fresh mint leaf, finely chopped
  • 2 tablespoons fresh parsley leaf, chopped
  • ¼ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper

For Serving

  • 4 flatbreads, warmed
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Preparation

  1. Make the spiced tomatoes: In a medium bowl, toss the tomatoes with the garlic, coriander, cumin, cayenne, salt, and olive oil until well coated.
  2. Make the smashed chickpeas: Add the chickpeas to a separate medium bowl and mash gently with a fork until about half of the chickpeas are mashed. Fold in the lemon juice, salt, pepper, green onion, and parsley until well combined.
  3. Make the yogurt sauce: In another medium bowl, stir together the yogurt, cucumber, mint, parsley, salt, and pepper.
  4. To assemble, spread ¼ of the yogurt sauce on a warmed flatbread. Dot with ¼ of the smashed chickpeas and top with ¼ of the spiced tomatoes. Repeat to make the remaining flatbreads. Garnish with a sprinkle of paprika and the chopped parsley. Slice in half or quarters before serving.
