Spinach Mac & Cheese

Ingredients

for 3 servings

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk (240 mL), plus more as needed
  • 4 cups fresh spinach (400 g)
  • 1 ½ cups grated cheddar cheese (185 g)
  • elbow pasta
  • 1 teaspoon garlic powder
  • salt, to taste
  • pepper, to taste

Preparation

  1. In a blender, combine spinach and 1 cup of milk and blend to combine. Simultaneously, in a separate pot of boiling water, cook pasta according to package directions. Drain once done and reserve pasta water.
  2. Melt butter in a saucepan and, once melted, whisk in flour to combine. Then, slowly add milk and spinach mixture, whisking to combine.
  3. Once sauce is slightly simmering, add cheese and other spices, stirring frequently until the sauce has thickened. Add pasta water if needed.
  4. Toss pasta in sauce and serve warm.
