Springtime Strawberry Chocolate Chip Muffins

Ingredients
for 12 servings
- 2 cups all purpose flour (250 g)
- 1 teaspoon salt
- 2 mL double acting baking powder (2 mL)
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 2 eggs
- ½ cup vegetable oil (120 mL)
- ½ cup unsweetened vanilla almond milk (120 mL), or regular milk
- ¾ cup plain greek yogurt (180 mL)
- ¾ cup white sugar (150 g), or 1/2 cup brown sugar
- 3 teaspoons vanilla extract
- 2 teaspoons almond extract
- 1 ½ cups strawberry (225 g), chopped
- 1 cup chocolate chips (175 g)

Preparation
- Sift and combine flour, salt, baking powder, sugar, cinnamon, nutmeg together in a bowl.
- Beat eggs, oil, vanilla, almond extract, Greek yogurt, almond milk together in another bowl.
- Add the dry ingredients little by little to the creamed mixture, and mix well. Stir in chocolate chips and strawberries.
- Grease a 12-cup standard muffin tin and fill with batter.
- Bake for about 20-25 minutes at 350°F, or until the tester inserted in the center comes out clean. Cool pan on rack before removing.
- Serve.
