Strawberry Crumble Cheesecake Bars

Ingredients

for 12 servings

CRUST:

  • 4 oz butter (110 g), melted
  • ½ cup powdered sugar (60 g)
  • 1 cup all purpose flour (120 g)
  • ½ teaspoon salt

CHEESECAKE LAYER:

  • 8 oz cream cheese (225 g), softened
  • ¼ cup sugar (50 g)
  • 1 teaspoon vanilla
  • 1 egg yolk
  • ¼ teaspoon salt

STRAWBERRY LAYER:

  • 5 ½ cups strawberry (825 g), diced or halved
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 2 teaspoons sugar
  • 2 teaspoons flour

CRUMBLE TOPPING:

  • 1 cup all purpose flour (120 g)
  • 2 tablespoons rolled oats
  • ⅓ cup brown sugar (65 g)
  • 6 tablespoons butter, softened

Preparation

  1. For the crust: Preheat the oven to 350°F. Line an 8×8-inch square pan with foil or parchment paper.
  2. Combine all crust ingredients in a bowl to form a soft dough.
  3. Press dough into the bottom of the prepared pan. Bake for about 15 minutes or until the edges begin to turn lightly golden brown. Then, allow to cool for 5-10 minutes before continuing.
  4. For the cheesecake layer:: Cream together cream cheese and sugar until smooth and fluffy.
  5. Add vanilla, egg yolk, and salt, and mix until well-combined. Set aside.
  6. For the strawberry layer: Combine all ingredients in a saucepan over medium heat. Cook for 10-15 minutes, stirring frequently, until reduced and thickened. Allow to cool until at least warm before using.
  7. For the crumble layer: Mix all ingredients with a wooden spoon or by hand until a crumbly dough forms.
  8. To assemble: Pour cheesecake filling over baked crust, spreading to the edges and corners.
  9. Then, evenly dollop cooled strawberry filling over cheesecake filling. Do not mix.
  10. Finally, crumble the brown sugar crumble topping evenly over the top of the strawberry layer.
  11. Bake for 25-30 minutes or until the cheesecake layer is set and crumble topping is lightly browned.
  12. Cool before serving. Enjoy!
