Summer Fruit Quinoa Salad

Ingredients

for 2 servings

  • 1 cup (235 mL) water
  • 1 ½ cups (355 mL) orange juice
  • 1 cup (170 g) quinoa
  • strawberry
  • blueberry
  • mango, cubed
  • fresh basil, chopped, for garnish

Dressing

  • ½ cup (120 mL) lime juice
  • 1 tablespoon honey

Preparation

  1. In a small saucepan bring water and orange juice to a boil then add quinoa, cover and simmer for 12-15 minutes.
  2. Add quinoa to a bowl. Top with strawberries, blueberries, and mangoes.
  3. In a small bowl, mix lime juice, and honey. Drizzle dressing over the quinoa and mix.
  4. Top with basil.
  5. Enjoy!
