Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon garlic, minced
  • ½ cup sundried tomato (25 g)
  • 1 lemon, juiced
  • 10 oz tuna (285 g), canned, drained
  • salt, to taste
  • pepper, to taste
  • 2 cups whole wheat pasta (200 g), cooked according to package instructions
  • 2 cups fresh spinach (80 g)

Preparation

  1. Heat the olive oil in a large skillet over medium-high heat.  Add the garlic and cook for about 30 seconds, until fragrant.
  2. Add the sun-dried tomatoes and lemon juice and cook for 1-2 minutes, until fragrant.
  3. Add the tuna, salt, and pepper, and mix until thoroughly combined.
  4. Add the pasta and spinach and cook for about 1 minute, until spinach starts to wilt.
  5. Remove the pasta from the heat and serve.
  6. Enjoy!
