Baked Fruit & Veggie Chips 4 Ways

for 1 serving
1 large sweet potato, or large yam
4 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried thyme
Preheat oven to 400˚F (200˚C).
Cut sweet potato into ⅛ inch (3 mm) to ¼ inch (6 mm) slices.
In a medium bowl, toss slices with olive oil until fully coated.
Add seasonings and toss until fully coated.
Arrange slices on a baking sheet.
Bake for 25 - 35 minutes, flipping halfway.
Allow slices to cool to room temperature.
