Ingredients

for 6 servings

  • 1 cup red split lentils (200 g)
  • 1 white onion, finely chopped
  • 1 bayleaf
  • 1 teaspoon turmeric
  • ½ tablespoon sea salt

For the tarka:

  • 4 tablespoons vegetable oil
  • 8 garlic cloves, thinly sliced
  • 2 dried red chilis
  • ¼ cup coriander (10 g), chopped
  • 2 medium tomatoes, sliced in quarters
  • salt, to taste
  • 1 lemon wedge, for serving

Preparation

  1. Wash lentils until the water runs clear.
  2. Add water until 1 inch above the surface of the lentils and boil.
  3. Add onions, bay leaf, turmeric and salt.
  4. Cook lentils for 10-15 mins or until soft.
  5. Remove bay leaf and blend lentils using a hand blender until you achieve desired consistency, preferably smooth.
  6. *Add more water at this point if you want a thinner dhal*
  7. Heat oil in a frying pan until hot and add dried red chilli and garlic. Allow garlic to lightly brown.
  8. Add this flavored oil to the blended lentils.
  9. Add tomatoes and chopped coriander.
  10. Serve with basmati or jasmine rice and lemon wedge.
