Ingredients

for 16 biscuits

  • 2 cups all-purpose flour (250 g)
  • 1 cup powdered sugar (100 g)
  • 1 teaspoon fine sea salt
  • 1 cup unsalted butter (230 g), room temperature, cut into 1-inch pieces
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat the oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper.
  2. Add the flour, powdered sugar, and salt to a food processor and pulse a couple times, until combined.
  3. While the food processor is running on low speed, add the butter, a few pieces at a time.
  4. Add the almond and vanilla extracts and pulse until the mixture looks like fine crumbs, then pulse a few more times until some of the crumbs start to clump together. Don’t overprocess; the dough should be somewhat crumbly.
  5. Dump the dough into the prepared baking pan and press into an even layer. Prick the dough all over with a fork.
  6. Bake until golden brown, 40–45 minutes. Transfer to a wire rack to cool for about 10 minutes.
  7. Use the parchment to lift the biscuits from the pan and place on a cutting board. While still warm, use a sharp chef's knife to cut into 16 squares.
