The Fluffiest Banana Cake

The Fluffiest Banana Cake

Ingredients

for 11 slices

  • 1 teaspoon vanilla extract
  • 3 bananas, mashed
  • 1 ½ cups flour (185 g)
  • 1 ½ teaspoons baking powder
  • 2 eggs
  • ⅓ cup butter (75 g), (softened or melted)
  • 1 cup white sugar (200 g)
  • ½ cup milk (120 mL)
  • ⅓ cup chocolate chips (55 g)
  • ¼ cup walnuts and raisins (30 g)

Preparation

  1. Mix flour and baking powder in a bowl, set aside.
  2. In a separate bowl, combine the butter (or oil) and the sugar. Mix until fully incorporated. Then, add eggs one at a time and beat well after each addition.
  3. Add the banana mixture to the egg mixture and mix well. Then, add milk and flour to the mixture, alternating with the two.
  4. Finally, fold in chocolate chips, walnuts, and raisins.
  5. Bake at 180*C for about 35 minutes or until baked through.
  6. Serve warm.
