Tofu Scramble Breakfast Tacos

Ingredients

for 1 serving

  • 1 tablespoon
    olive oil
  • ⅓ block tofu
  • 1 tablespoon
    low sodium soy sauce
  • 1 tablespoon
    nutritional yeast
  • ½ teaspoon
    turmeric
  • ¾ teaspoon
    garlic powder
  • black pepper, to taste
  • 1 cup
    spinach (40 g)
  • 2 whole wheat tortillas
  • ¼ avocado, sliced
  • ½ red pepper, diced
  • hot sauce, optional

Preparation

Under 30 min

  1. In a medium-sized sauté pan, add olive oil and tofu, and sauté until lightly browned.
  2. Add in soy sauce, nutritional yeast, garlic powder, turmeric, black pepper, red pepper, and spinach, then sauté for 3-5 more minutes or until spinach is wilted.
  3. Serve immediately on tortillas and top with avocado, and hot sauce.
  4. Enjoy!
