Ingredients

for 24 slices

  • 3 cups rolled oats (240 g)
  • 1 cup chunky peanut butter (240 g)
  • ¾ cup honey (250 g)
  • 1 teaspoon kosher salt
  • 1 cup raisin (150 g)
  • 1 cup peanuts (125 g)
  • 1 cup golden raisin (150 g)

Preparation

  1. Toast the oats in a medium nonstick skillet over medium heat for 2–3 minutes, until golden brown and fragrant. Remove the pan from the heat and let the oats cool.
  2. Melt the peanut butter and honey together in a small saucepan over medium heat for about 2 minutes, until pourable and smooth. Stir in the salt, then remove the pot from the heat.
  3. Transfer the peanut butter mixture to a large bowl. Add the toasted oats, raisins, peanuts, and golden raisins. Stir until well coated.
  4. Transfer the mixture onto a sheet of parchment paper and roll into a log, pressing together. Wrap in plastic wrap and freeze for at least 4 hours, up to overnight.
  5. Remove the roll from the freezer and slice into 24 pieces. The slices will keep in the freezer for up to 1 month or in the refrigerator for up to 5 days.
