Trio Cookies

Ingredients

for 30 servings

For the Biscuits:

  • ½ cup butter (115 g)
  • 1 cup brown sugar (200 g)
  • ½ cup caster sugar (100 g)
  • ½ cup olive oil (110 mL)
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 3 cups plain flour (410 g)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

For the Fillings:

  • ½ cup cocoa powder (50 g)
  • ½ cup milk chocolate chips (75 g)
  • ¼ cup sprinkles (50 g), (The lieber ones work best)

Preparation

  1. Preheat the oven to 175° C.
  2. In a large bowl, cream together the butter and sugar.
  3. Add the olive oil, eggs and vanilla extract and continue to whisk.
  4. Fold in the flour, baking powder, soda and salt until fully combined.
  5. Place the dough in the fridge for at least an hour.
  6. After an hour, retrieve the dough and divide into 3 equal parts.
  7. Add the cocoa powder to one part, chocolate chips to another and the sprinkles to the final part.
  8. Divide each third into 30 pieces.
  9. Create one cookie by making a dough ball with one piece of dough from each flavor. Place on greased cookie sheet, repeat with remaining dough, and space cookies 2 cm apart.
  10. Bake for 10-12 minutes. Let cool, 5-10 minutes.
  11. Serve.
