Unicorn Lemonade

Unicorn Lemonade

Ingredients

for 4 servings

Unicorn Ice Cubes

  • 1 ½ cups filtered water (360 mL), divided
  • 2 drops purple food coloring
  • 2 drops pink food coloring
  • 2 drops blue food coloring

Lemonade

  • 4 cups filtered water (960 mL), divided
  • ½ cup granulated sugar (100 g)
  • 1 cup fresh lemon juice (240 mL)
  • lemon wedge, for garnish
  • rainbow sparkling sugar, for garnish

Preparation

  1. Make the ice cubes: In a spouted liquid measuring cup, stir together ½ cup (120 ml) water and the purple food coloring. Pour the purple water into an ice cube tray. Repeat with the remaining water and food coloring. Transfer the ice cube tray to the freezer for 4–6 hours until frozen solid.
  2. Make the lemonade: In a small saucepan, combine 1 cup of water and the sugar. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 2 minutes, or until the sugar has dissolved. Remove the pot from the heat and let cool completely.
  3. Combine the remaining 3 cups water, cooled simple syrup, and lemon juice in a pitcher. Stir to combine, then cover with plastic wrap and transfer to the refrigerator to chill for at least 1 hour, or until ready to serve.
  4. Cut a small slit in a lemon wheel and rub around the rims of the serving glasses, then sprinkle with rainbow sugar.
  5. Add some unicorn ice cubes to each glass, then pour in the lemonade. Garnish each glass with a lemon wedge.
