Vegan Banana Bread

Ingredients

for 12 servings

  • 4 ripe bananas, large
  • ½ cup vegetable oil (120 mL), or canola oil
  • ½ cup unsweetened applesauce (120 mL)
  • ¾ cup light brown sugar (150 g)
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder
  • 2 cups all purpose flour (250 g)

Preparation

  1. Preheat the oven to 350° F.
  2. Grease a standard loaf pan with vegetable oil or spray.
  3. Mix all the dry ingredients in a bowl and gently stir.
  4. In a separate bowl, mix the applesauce, brown sugar, vanilla, and oil until evenly combined.
  5. Mash the bananas finely with a fork in a separate bowl and add to the
  6. wet ingredients.
  7. Gently fold in the bowl of dry ingredients to the wet ingredients until everything is evenly combined. Do not over-mix.
  8. Place the banana bread in the preheated oven for 60-70 minutes. Insert a toothpick into the loaf to see if it is ready. If the toothpick does not come out clean, bake for a few more minutes.
  9. Leave the banana bread in the loaf pan for 10 minutes to settle, then transfer to a wire cooling rack and allow to cool completely. Enjoy!
