Weekday Broccoli Soup

Weekday Broccoli Soup

Ingredients

for 4 servings

  • 1 head broccoli, florets and chooped stalks
  • ½ small white onion, diced
  • 2 cloves garlic, minced
  • salt and pepper, to taste
  • 1 cup water (240 mL)
  • 2 tablespoons butter

Garnishes (optional):

  • shredded white cheddar
  • greek yogurt

Preparation

  1. In a pan on medium heat, sauté onion in oil until translucent. Add garlic, salt, and pepper and saute.
  2. Add 1 cup of water, add broccoli pieces, and if needed, add more water to ensure broccoli is covered.
  3. Cook for 8 minutes or until broccoli starts to soften.
  4. Blend the mixture well using an immersion blender, add butter, and stir to melt.
  5. Season and garnish to taste. Serve warm alongside toasted sourdough bread.
  6. Enjoy!
