White Chocolate Chunk & Raspberry Jam Cake

Ingredients

for 6 servings

Cake:

  • ¼ cup butter (60 g)
  • ¼ cup oil (60 g)
  • 100 g sugar (100 g)
  • 2 eggs
  • ¼ cup milk (75 mL)
  • vanilla extract, dash
  • ¼ cup raspberry jam (75 g)
  • 1 ¼ cups flour (160 g)
  • 1 teaspoon baking powder
  • ½ cup white chocolate chunks (75 g)

Cream:

  • 1 cup heavy cream (200 mL)
  • ½ lemon
  • vanilla pod

Preparation

  1. Preheat the oven at 180ºC.
  2. For the cake, set aside three separate bowls and do the following:
  3. Bowl 1: Add butter, oil and sugar, whip until it becomes a creamy mixture.
  4. Bowl 2: Mix the eggs, milk, vanilla and raspberry jam. Add slowly to the previous bowl.
  5. Bowl 3: Mix all the dry ingredients and add to Bowl 1.
  6. Now, grease your mold, pour the mixture in and bake for 20 minutes .
  7. For the cream: Mix the cream and the vanilla beans, whip until it reaches a soft peak.
  8. Cool the cake and top with cream. Once decorated, serve and enjoy!
