  • 4 medium zucchinis
  • salt, to pull moisture from the zucchini
  • ¾ cup bread crumbs (70 g)
  • ¾ cup shredded cheddar cheese (75 g)
  • 2 large eggs
  • 1 tablespoon garlic powder
  • 1 teaspoon pepper

  1. Preheat oven to 400°F (200˚C). Grease a baking sheet with nonstick spray.
  2. Grate the zucchini into a bowl and salt generously. Allow the zucchini to sit for 20 minutes as the salt draws out moisture.
  3. Turn the zucchini onto a clean dish towel and wring it out over the sink or into a separate bowl.
  4. Transfer the zucchini back into the bowl and add the bread crumbs, cheese, eggs, garlic powder, and pepper. Mix together until well-combined.
  5. Roll a tablespoon at a time of the zucchini mixture into tots. Place on the prepared baking sheet.
  6. Bake the tots for 20-25 minutes, or until crispy. Serve warm.
