I Tried The Stovetop Sandwich That's All Over Pinterest (And It Was Actually Brilliant)

It goes by many names β€” and you can cook it over the stovetop or campfire.

I spend a good amount of time on Pinterest browsing recipes and scouting for the latest food trends. And lately, "mountain pie" has been popping up all over the place. πŸ‘€

It's also known as pie-iron pizza, or (the more to-the-point name): campfire pizza sandwiches.

A mountain pie is basically a grilled cheese sandwich that adds all the best parts of pizza β€” and you can make it in just a few minutes on the stove or over a campfire.

TBH, I have no camping trips on my horizon, but I knew I needed to try out this comfort food mash-up. I mean, what could be bad about pizza and grilled cheese rolled into one comforting sandwich?

To make mountain pie myself, I followed a recipe from the cooking blog Cookie Dough and Oven Mitt. It seemed pretty fool-proof.

You don't need any fancy ingredients for it β€” just bread, tomato sauce, cheese, pepperoni, and butter.

Traditionally, a mountain pie is made in a camp cooker or a square pie iron, which is a long, square-shaped cast iron cooker with a handle and a lid. I don't have that β€” so I just used my regular cast iron skillet on the stovetop.

If you don't have a cast iron, you could easily make this in a regular skillet or non-stick pan, too.

First, coat two slices of bread in softened butter. Place them butter-side-down in a cast-iron skillet (or pie iron).

The butter is what makes the bread nice and golden brown and decadent.

Next, the toppings: a layer of tomato sauce, shredded cheese, pepperoni, and finally more shredded cheese on top.

Now, add the second slice of bread but make sure to place it butter side up so that when you flip the sandwich, the butter is directly touching the skillet.

Flip the sandwich and cook for about three minutes until both sides of bread are golden brown and the cheese is melted.

Transfer your creation to a plate, slice it in half (or don't), and try not to devour it in under five seconds. Be warned: this is the hardest part.

To steal my father's words after he tried this creation, "It's not on the spa menu." LOL. However if you want to indulge a little, you should probably try a mountain pie... immediately. πŸ˜‹

This sandwich might be the ultimate comfort food. It's saucy, it's savory, it's incredibly cheesy, and it's slightly spicy thanks to pepperoni.
