Air Fryer Cauliflower Buffalo Wings
Meet your newest air fryer obsession. These cauliflower buffalo wings are super crunchy, packed with flavor, and the perfect healthier alternative to traditional wings. We use cake flour instead of all-purpose flour for a lighter, crunchier breading. However, if you’re in a pinch, you can use all-purpose. Be careful not to overmix the batter or you could end up with a dense, soggy coating.

Ingredients

- ½ cup cake flour (60 g), plus 2 tablespoons
- ¾ cup cornstarch (95 g), divided
- 1 teaspoon baking soda
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon kosher salt, divided, plus more to taste
- ¾ cup sparkling water (180 mL), cold
- 3 cups cauliflower florets (450 g)
- ½ cup buffalo hot sauce (120 mL)
- 1 stick unsalted butter
- 2 tablespoons honey
- sauce of choice, for dipping

Preparation
- Preheat the air fryer to 425°F (220°C) for 5 minutes.
- In a medium bowl, whisk together the cake flour, ½ cup plus 2 tablespoons cornstarch, the baking powder, smoked paprika, garlic powder, onion powder, and ½ teaspoon salt. Slowly whisk in the sparkling water until just combined. Do not overmix; some lumps are okay.
- In a large bowl, toss the cauliflower florets with the remaining ¼ cup cornstarch and ½ teaspoon salt.
- Shake off any excess cornstarch, then dip the cauliflower in the wet batter, letting any excess drip off.
- Working in batches, add the cauliflower to the air fryer in a single layer and cook for 5 minutes, or until golden brown. Remove from the air fryer and repeat with the remaining florets.
- Meanwhile, make the sauce: Add the hot sauce, butter, and honey to a small skillet. Cook over medium heat, stirring occasionally, until the butter is melted and the sauce is evenly combined.
- In a large bowl, toss the fried cauliflower with the buffalo sauce until well coated.
- Serve immediately with your favorite dipping sauce.
