Ingredients

for 4 servings

  • vegetable oil, for frying
  • 3 cups mashed potatoes (750 g)
  • 1 cup shredded white cheddar cheese (100 g)
  • 1 cup diced ham (135 g)
  • ½ cup all-purpose flour (60 g)
  • 3 large eggs, beaten
  • 1 ½ cups bread crumbs (170 g)

Preparation

  1. Fill a medium pot halfway with vegetable oil. Heat over medium heat until the temperature reaches 350°F (180°C).
  2. In a medium bowl, combine the mashed potatoes and shredded white cheddar cheese.
  3. Flatten ¼–⅓ cup of the mashed potato mixture into a disc in the palm of your hand, then place 4–6 pieces of ham in the center. Roll into a tight ball, completely encasing the ham in the potatoes. Repeat with the remaining mashed potato mixture and ham to make more balls.
  4. Add the flour, eggs, and bread crumbs to 3 separate medium bowls.
  5. Coat each potato ball in the flour, then dip in the eggs, then cover completely with the bread crumbs.
  6. Fry the croquettes, 2–3 at a time, in the hot oil for 3 minutes, or until golden brown. Transfer to a paper towel-lined plate to drain while you repeat with the remaining croquettes.
  7. Serve warm.
