Preparation
- Fill a medium pot halfway with vegetable oil. Heat over medium heat until the temperature reaches 350°F (180°C).
- In a medium bowl, combine the mashed potatoes and shredded white cheddar cheese.
- Flatten ¼–⅓ cup of the mashed potato mixture into a disc in the palm of your hand, then place 4–6 pieces of ham in the center. Roll into a tight ball, completely encasing the ham in the potatoes. Repeat with the remaining mashed potato mixture and ham to make more balls.
- Add the flour, eggs, and bread crumbs to 3 separate medium bowls.
- Coat each potato ball in the flour, then dip in the eggs, then cover completely with the bread crumbs.
- Fry the croquettes, 2–3 at a time, in the hot oil for 3 minutes, or until golden brown. Transfer to a paper towel-lined plate to drain while you repeat with the remaining croquettes.
- Serve warm.
- Enjoy!
