Ingredients

for 8 sfogliatines

  • 1 sheet frozen puff pastry, thawed
  • ¾ cup confectioners' sugar
  • 15 g egg whites (15 g), (about 1/2 egg white)
  • 3 tablespoons apricot jam

Preparation

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Lay the puff pastry on a lightly floured surface and cut into 8 equal rectangles (about 1¼ x 4-inches). Arrange on the prepared baking sheet, leaving space between.
  3. In a medium bowl, sift the confectioners' sugar to remove any clumps. Add the egg whites and mix until icing is well combined.
  4. Brush the top of each pastry evenly with the icing.
  5. In a small bowl, strain the jam to remove any lumps. Transfer to a piping bag. Pipe Xs on top of the icing to create a pattern.
  6. Bake for 20 minutes, or until golden brown and crispy. Remove from the oven and let cool completely.
