Ingredients
for 8 glasses
- 5 whole lemons, plus 1, sliced into rounds
- 1 cup granulated sugar (200 g), plus more for coating lemons
- 4 cups water (960 mL)
- 4 cups ice (560 g)

Preparation
- On a cutting board, halve the whole lemons crosswise and coat the cut sides with a thin layer of sugar.
- Preheat the grill, if using, to medium-high heat. Place the lemons on the grill grates or an 11-inch (28-cm) griddle pan, cut-side down and cook for 6-8 minutes, until caramelized.
- Remove the lemons from the griddle and let cool for 5-10 minutes.
- Juice the lemons through a fine-mesh strainer into a half-gallon (2 liter) pitcher.
- Add the sugar, water, sliced lemon, and ice (see Note below) and stir until the sugar is dissolved.
- NOTE: Do not add the ice if preparing ahead of time. Add the ice immediately before serving.
