Delicious Banana Oat Muffins


for 12 servings

  • ⅓ cup brown sugar (75 g)
  • ¼ cup white sugar (25 g)
  • 4 tablespoons softened butter
  • ⅛ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup milk (60 mL)
  • ⅔ cup flour (85 g)
  • ¼ tablespoon baking powder
  • ¼ tablespoon baking soda
  • 1 ⅓ cups oats (135 g)
  • 1 banana, mashed
  • 1 teaspoon cinnamon
  • 2 tablespoons honey

  1. Preheat the oven to 350°F and grease mini muffin tins.
  2. Cream sugar and butter together. Then, add salt and mix on low speed until combined.
  3. Add milk, vanilla and honey to your mixture.
  4. In a separate bowl, sift together flour, baking soda and baking powder.
  5. Combine dry ingredients with wet ingredients slowly until combined.
  6. To this, add in oats, bananas, and cinnamon and mix to form a soft dough.
  7. Distribute batter evenly amongst your muffin tins and bake for 15-20 minutes until the toothpick comes out clean.
  8. Serve hot and enjoy.
