Homemade Sicilian Pizzette

Ingredients

for 2 servings

  • 1 store bought pizza dough, (Note: Not frozen dough (i.e. Pillsbury))
  • 3 crushed san marzano tomatoes, crushed
  • 2 tablespoons parmesan cheese
  • 2 tablespoons fresh basil
  • 2 tablespoons pancetta, diced
  • 1 teaspoon red onion, diced
  • ¼ cup extra virgin olive oil (60 mL)
  • 1 teaspoon salt
  • 1 teaspoon pepper

Preparation

  1. Upon bringing your dough home from the store, place it in a bowl that has been lightly greased with olive oil.
  2. Place the dough inside the bowl and cover the dough with a kitchen cloth.
  3. Let the dough sit for approximately 1.5–2 hours, or until the dough rises and expands.
  4. Once risen, place the dough onto a baking sheet and cut it into 2 halves.
  5. Begin stretching the dough in a circular manner on the baking sheet.
  6. After some pan stretching, put each of your fists underneath the dough and gently stretch the dough out in a circular direction.
  7. One stretched into a circular shape, grease your baking sheet liberally with olive oil and place your dough back onto the baking sheet.
  8. Next, brush the top of your dough with Olive Oil and layer as follows:
  9. Crushed San Marzano tomatoes
  10. A sprinkling of salt and pepper
  11. Sprinkling of parmesan cheese
  12. Pieces of fresh basil
  13. Pieces of cubed pancetta
  14. Pieces of chopped red onion
  15. A light drizzle of olive oil
  16. Ensure that all the ingredients are distributed evenly throughout the entire circumference of the pie.
  17. Bake in a convection oven at 500°F for 25–35 Minutes or until pizzette is golden brown.
  18. Serve and enjoy!
