Ingredients

for 20 mini chicken & waffles

Chicken Bites:

  • 4 boneless, skinless chicken thighs
  • 2 cups buttermilk
  • 1 tablespoon hot sauce of choice
  • avocado oil spray
  • 1 ½ cups all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • freshly ground black pepper, to taste
  • 2 large eggs, beaten

Whipped Honey:

  • 1 cup honey

Waffles:

  • Packaged waffle mix of choice, enough to make 20 mini waffles

Toppings:

  • 3 tablespoons chili crisp oil, or to taste (optional)
  • minced chives (optional)

Preparation

  1. Brine the chicken bites: Cut the chicken into 20 bite-sized pieces and place into a medium bowl. Add the buttermilk and hot sauce; mix with a spoon until the chicken is evenly coated. Place in the refrigerator to marinate for at least 1 hour.
  2. Meanwhile, make the whipped honey: Pour the honey into the bowl of an electric stand mixer. Using the whip attachment, whisk on high speed for 15-20 minutes, until the honey turns pale and creamy. Transfer to a glass jar with a lid. Set aside.
  3. Preheat the air fryer to 400°F (200°C). Coat the basket of the air fryer with avocado oil spray.
  4. Air fry the chicken bites: In a large shallow bowl, mix together the flour, paprika, salt, and pepper with a spoon or whisk until combined. In a separate medium shallow bowl, add the beaten eggs.
  5. Remove the chicken from the refrigerator. Working one at a time, remove the chicken from the marinade and dredge in the flour mixture to coat on all sides. Dip the chicken into the beaten eggs, then dip again in the flour to coat all over. Transfer the coated chicken to the prepared air fryer basket. Repeat with the remaining chicken, arranging them in an even layer in the air fryer basket. Discard the buttermilk marinade.
  6. Generously mist the tops of the coated chicken with avocado oil spray. Air fry for 14-16 minutes, until golden brown and crispy, flipping the pieces over halfway. Transfer the chicken to a plate and set aside.
  7. Make the waffles: Preheat a mini waffle iron. Prepare enough of the packaged waffle mix according to the instructions to make 20 mini waffles. Scoop the batter into each section of the preheated waffle iron, and cook for 3-4 minutes, until golden brown.
  8. Assemble the chicken & waffles: Arrange the mini waffles in a single layer on a board or platter and place a chicken bite over each one. Spoon about ¼ teaspoon chili crisp oil over each chicken bite, then drizzle with about 1 teaspoon whipped honey and garnish with chives.
