Ingredients

for 12 egg rolls

  • avocado oil spray, for greasing

Filling:

  • 8 oz ricotta cheese
  • 4 oz cream cheese, room temperature
  • ⅓ cup powdered sugar, plus more for dusting
  • ½ teaspoon vanilla extract
  • 3 tablespoons semi-sweet mini chocolate chips

Egg Rolls:

  • 12 egg roll wrappers
  • 2 tablespoons avocado oil, for brushing
  • ¼ cup semi-sweet mini chocolate chips, for drizzling (optional)

Preparation

  1. Preheat the air fryer to 360°F (182°C). Grease the air fryer basket with avocado oil spray.
  2. Make the filling: Place a fine sieve over a medium bowl and cover with a cheesecloth or paper towel with a slight overhang. Spoon the ricotta into the cheesecloth and spread it evenly with the back of a spoon. Keep spreading and pushing until the ricotta drains its liquid.
  3. In a large bowl, add the drained ricotta, cream cheese, powdered sugar, and vanilla. Use a handheld mixer or whisk to beat until well combined. Fold in 3 tablespoons mini chocolate chips using a spatula or spoon until evenly distributed.
  4. Make the egg rolls: Lay an egg roll wrapper flat on a clean surface. Use your finger or a pastry brush to lightly wet the edges with water. Spoon or scoop 2 heaping tablespoons filling into a line in the center of the egg roll wrapper. Fold up the bottom half, tightly fold in the sides, and gently roll upward to seal. Repeat with the remaining wrappers and filling.
  5. Air fry the egg rolls: Working in batches if needed, gently place the egg rolls, seam-side down, into the prepared air fryer basket. Brush the tops of the egg rolls with the avocado oil. Air fry for 7 minutes, then flip and air fry for another 2 minutes.
  6. Meanwhile, in a small bowl, heat ¼ cup mini chocolate chips in the microwave until melted and smooth.
  7. Remove the egg rolls from the air fryer and let cool for 2 minutes.
  8. Serve warm with a dusting of powdered sugar and a drizzle of melted chocolate.
