Ingredients

Dressing

  • 2 tablespoons
    olive oil
  • ¼ cup
    lime juice (60 mL)
  • 2 teaspoons
    cumin
  • 2 teaspoons
    chili powder
  • 1 teaspoon
    salt
  • 1 teaspoon
    pepper
  • ¼ cup
    fresh cilantro, chopped (10 g)

Salad

  • 2 cans chickpeas, drained, rinsed
  • 1 cucumber, chopped, quartered
  • 20 cherry tomatoes, halved
  • 1 onion, chopped
  • 1 avocado, diced
  • ⅓ cup
    carrot, shredded (35 g)

Preparation

  1. For the dressing, combine dressing ingredients in a small bowl. Whisk together until mixed thoroughly.
  2. In a large bowl, combine chickpeas, cucumber, tomatoes, onion, avocado, carrots, and dressing. Toss together until evenly combined.
