Brownie Cupcakes

Ingredients

for 8 servings

  • ¼ cup butter (55 g), melted or soften
  • 2 tablespoons sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ tablespoon cocoa powder, sifted
  • ½ cup pancake mix (120 g)
  • ⅓ cup dark chocolate (65 g), chopped
  • heavy cream, or ready made frosting

Preparation

  1. Preheat the oven to 350° F.
  2. Cream butter and sugar in a bowl, then add in the eggs and the vanilla extract and whisk until smooth.
  3. Add the dark chocolate and the cocoa powder and mix thoroughly. Then, add in the pancake mix and stir.
  4. Pour the batter in a lined cupcake tray and make sure it has cupcake liners if you have non use butter or oil before putting the batter.
  5. Bake for 10 minutes, then retrieve from the oven and cool.
  6. Serve.
