Ingredients
for 24 servings
- ¼ cup vegan butter (55 g), melted
- 1 cup almond milk (240 mL)
- ½ cup lemon juice (120 mL)
- 1 teaspoon vanilla extract
- 1 cup sugar (200 g)
- 1 teaspoon baking soda
- 1 ½ teaspoons baking powder
- 2 ¼ cups gluten free all purpose flour (280 g), or regular flour
- 1 ½ cups powdered sugar (165 g)
- ¼ cup vegan butter (55 g)
- 4 oz vegan cream cheese (110 g)
Preparation
- Preheat the oven to 375.
- Mix melted vegan butter, almond milk, lemon juice, vanilla, and sugar. Then, add baking soda and baking powder. Mix.
- Quickly add the flour and mix until combined.
- Pour the batter into a greased loaf pan and bake for 45 minutes.
- While the loaf is baking, use an electric hand mixer to mix the vegan cream cheese icing ingredients and spread over the warm loaf.
