Super Moist Vegan Lemon Loaf

Ingredients

for 24 servings

  • ¼ cup vegan butter (55 g), melted
  • 1 cup almond milk (240 mL)
  • ½ cup lemon juice (120 mL)
  • 1 teaspoon vanilla extract
  • 1 cup sugar (200 g)
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • 2 ¼ cups gluten free all purpose flour (280 g), or regular flour
  • 1 ½ cups powdered sugar (165 g)
  • ¼ cup vegan butter (55 g)
  • 4 oz vegan cream cheese (110 g)

Preparation

  1. Preheat the oven to 375.
  2. Mix melted vegan butter, almond milk, lemon juice, vanilla, and sugar. Then, add baking soda and baking powder. Mix.
  3. Quickly add the flour and mix until combined.
  4. Pour the batter into a greased loaf pan and bake for 45 minutes.
  5. While the loaf is baking, use an electric hand mixer to mix the vegan cream cheese icing ingredients and spread over the warm loaf.
