Apple Custard Streusel Pie

Ingredients

for 8 servings

Crust:

  • 2 cups flour (250 g)
  • ¼ teaspoon salt
  • ¼ cup cold butter (55 g)
  • ¼ cup shortening (55 g)

Filling:

  • 2 tablespoons softened butter
  • ¾ cup sugar (150 g)
  • 1 cup sour cream (240 g)
  • ⅕ cup flour (25 g)
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups apple (300 g), sliced
  • ¾ cup shredded cheddar cheese (75 g)

Topping:

  • 4 tablespoons softened butter
  • ½ cup flour (65 g)
  • ⅓ cup brown sugar (65 g), firmly packed

Preparation

  1. Make the crust by mixing flour, salt, and cold butter and shortening cut into bits. Mix in a food processor or with a fork until crumbly and a cornmeal consistency. Add 3 to 4 tablespoons of cold water. Mix and then form into a ball, then roll flat. Put in a 9-inch pie plate and chill for one hour.
  2. Mix softened butter and sugar until well-blended. Add the sour cream, flour, salt, vanilla and eggs and beat until blended. Stir in sliced apples and cheddar cheese and stir gently to coat. Pour into the prepared pie shell.
  3. Bake in a 400°F preheated oven for 30 minutes. (Cover the pie edges with foil or silicone edge covers.)
  4. Prepare the topping by mixing the softened butter, flour and brown sugar together with a fork. After the pie is baked for 30 minutes, remove the pie and sprinkle on the streusel topping. Put the pie back in the oven and bake for 15 minutes.
  5. Remove pie from the oven and cool. Serve.
