Ingredients
for 6 servings
- 1 loaf ciabatta bread, cut in half lengthwise
- 2 tablespoons butter
- ½ cup white onion (85 g), diced
- 2 tablespoons garlic, minced
- 1 can green chillies
- 1 cup mild salsa (230 g)
- 2 cups rotisserie chicken (200 g), shredded
- 1 packet taco seasoning
- ½ cup chicken stock (120 mL)
- 1 cup frozen corn (140 g)
- 1 cup shredded monterey jack cheese (100 g)

Preparation
- Slice the ciabatta bread lengthwise and place on a foil-lined cookie sheet. Set aside.
- Saute the onion and garlic in butter until soft in a skillet over medium heat.
- Stir in the shredded chicken, chilies, salsa, broth, and taco seasoning. Cook, stirring occasionally, until the mixture thickens, about 10 minutes.
- Stir in frozen corn and cook for another 5 minutes, stirring often.
- Lightly toast bread halves.
- Spoon ½ of the chicken mixture on each bread half. Then, sprinkle with the cheese.
- Place the pan back under the broiler for about 3-5 minutes, until the filling is hot and the cheese is melted.
- Serve warm.
