Ingredients

  • nonstick cooking spray, for greasing
  • 6 tablespoons unsalted butter, melted, plus more for greasing
  • 1 ½ cups milk (360 mL)
  • 1 tablespoon white vinegar
  • 1 tablespoon sugar
  • 1 large egg
  • 1 cup all-purpose flour (125 g)
  • 1 cup cornmeal (150 g), finely ground
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 ½ teaspoons garlic powder
  • ½ teaspoon paprika
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup shredded cheddar cheese (100 g), plus more for garrnish
  • 2 cups chili (485 g), prepared, such as https://tasty.co/recipe/chili-from-leftover-sauce, warmed
  • sour cream, for serving
  • green onion, chopped, for serving

Preparation

  1. Grease a waffle iron with melted butter or nonstick spray. Set the heat to medium.
  2. In a large bowl, whisk together the melted butter, milk, vinegar, sugar, and egg. Add the flour, cornmeal, baking soda, baking powder, garlic powder, paprika, salt, and pepper and whisk to incorporate. Fold in the cheddar cheese with a rubber spatula.
  3. Pour 1 scant cup (260 G) of batter onto the waffle iron and cook until golden brown, about 5 minutes. Repeat with the remaining batter.
  4. Serve the waffles warm and topped with chili, more cheddar cheese, sour cream, and green onions.
