Crispy Pan-Fried Breakfast Potatoes

Ingredients

for 2 servings

Seasoning Mix:

  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon chili powder
  • ¼ teaspoon sugar, (can use alternative such as coconut sugar)
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika

Main Ingredients:

  • 3 tablespoons olive oil, extra virgin
  • 2 medium potatoes, diced

Garnish:

  • 1 tablespoon spinach, chopped

  • Carbs 29g
  • Fiber 2g
  • Sugar 1g

Preparation

  1. Place the frying pan on the stove on medium heat. Add 3 tbsp of extra virgin olive oil and to this, add the 2 diced potatoes.
  2. Stir in seasoning mix until potatoes are well-coated. Cover the pan with lid and let sit for 5 minutes. Uncover pan and stir briefly
  3. Now, cover the pan with lid again and let sit for another 5 minutes. Then, uncover the pan and garnish with 1 tbsp chopped spinach.
  4. Serve warm.
