Ingredients
for 3 servings
2 tablespoons olive oil
3 cloves garlic, chopped
2 chicken breasts, thinly sliced
2 cups (250 g) asparagus, chopped
1 cup (200 g) cherry tomato, halved
1 cup (120 g) carrot, sliced
1 teaspoon pepper
1 teaspoon salt
4 cups (400 g) penne pasta
1 cup (110 g) parmesan cheese
Preparation
Heat oil in a large pot over high heat. Cook garlic and chicken until no pink is showing.
Add asparagus, tomatoes, carrots, salt, and pepper, cooking for about 2 minutes.
Add pasta and parmesan, stirring until cheese is melted and evenly distributed.
Serve.
