- 12 oz cooked chicken (340 g), shredded
- ⅔ cup fat-free or low-fat plain Greek yogurt (190 g)
- ½ cup finely chopped celery (115 g)
- 1 ½ tablespoons sweet relish
- 1 tablespoon dijon mustard
- 1 scallion, thinly sliced
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- kosher salt, to taste
- freshly ground black pepper, to taste
- 4 leaves lettuce
- 20 cherry tomatoes
- 4 pita breads

Preparation
- In a large bowl, mix together the chicken, yogurt, celery, relish, Dijon, scallion, garlic powder, paprika, salt, and pepper until well-combined.
- Divide the chicken salad evenly between 4 containers. Lay a lettuce leaf on top of each portion of chicken, then add 5 tomatoes to each container. Cover and refrigerate for up to 4 days.
- When ready to serve, toast the pita, if desired, then stuff the chicken salad, lettuce, and tomatoes into the pita pocket.
