  • 12 oz cooked chicken (340 g), shredded
  • ⅔ cup fat-free or low-fat plain Greek yogurt (190 g)
  • ½ cup finely chopped celery (115 g)
  • 1 ½ tablespoons sweet relish
  • 1 tablespoon dijon mustard
  • 1 scallion, thinly sliced
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 4 leaves lettuce
  • 20 cherry tomatoes
  • 4 pita breads

Preparation

  1. In a large bowl, mix together the chicken, yogurt, celery, relish, Dijon, scallion, garlic powder, paprika, salt, and pepper until well-combined.
  2. Divide the chicken salad evenly between 4 containers. Lay a lettuce leaf on top of each portion of chicken, then add 5 tomatoes to each container. Cover and refrigerate for up to 4 days.
  3. When ready to serve, toast the pita, if desired, then stuff the chicken salad, lettuce, and tomatoes into the pita pocket.
