Ingredients

Meatballs
- 1 lb ground beef (455 g)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon pepper
- neutral oil, as needed
Soup
- 2 carrots, diced
- 1 celery, diced
- 1 can diced tomatoes
- ½ cup vegetable stock (120 mL)
- ½ cup alphabet pasta (100 g), or any pasta of your choice, cooked
- cheese, to taste, optional

Preparation
- Make the meatballs: In a large bowl, combine the ground beef, garlic powder, onion powder, salt, and pepper. Mix gently with your hands until just combined.
- Roll the meat mixture into small balls, then pan-sear in a large pot with a drizzle of oil until the meatballs have a dark brown crust, about 2 minutes per side. Remove the meatballs from the pot and set aside.
- Add the carrot, celery, and tomatoes the same pot. Cover and cook for 20 minutes, or until the vegetables are tender.
- Use an immersion blender to purée the vegetables until smooth.
- Add the vegetable stock, pasta, and meatballs to the pot, cover, and simmer for 5 minutes.
