Homemade Chicken Noodle Soup

Ingredients

for 8 servings

  • 1 rotisserie chicken, diced
  • 1 teaspoon poultry seasoning
  • ½ teaspoon fresh thyme
  • 1 clove garlic, minced
  • salt and pepper, to taste
  • 10 cups chicken broth (2.4 kg)
  • 3 tablespoons vegetable oil
  • 1 cup white onion (175 g), chopped
  • 1 cup celery (100 g), chopped
  • 2 ½ cups egg noodle (400 g)
  • 4 large carrots, sliced
  • 1 bag frozen peas

Preparation

  1. Add oil, celery, & onions to a large pot on medium-heat and mix with a wooden spoon. Saute until onions appear translucent, then add minced garlic and saute well..
  2. Once cooked through, add chicken broth, chicken, thyme, poultry seasoning, salt, & pepper, and mix well with a plastic spoon.
  3. Add carrots and let simmer for 5 minutes. Then, add egg noodles and let simmer for 5 minutes.
  4. Add peas and simmer for an additional 5 minutes.
  5. Serve warm.
