Lavender Trail Mix

Ingredients

for 6 servings

  • 1 cup marcona almonds (125 g)
  • 1 cup raw cashews (125 g)
  • 3 tablespoons dried culinary-grade lavender buds
  • 1 tablespoon kosher salt
  • 2 tablespoons sugar
  • 1 tablespoon olive oil
  • ½ cup dried blueberries (70 g)
  • ½ cup dried pears (70 g), chopped
  • 1 cup white chocolate chips (170 g)

Preparation

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Spread the almonds and cashews in a single layer on the prepared baking sheet. Roast for 15 minutes, until the cashews start to brown.
  3. In a spice grinder, combine the lavender flowers, salt, and sugar and grind into a soft powder.
  4. Transfer the roasted nuts to a large bowl and toss with the olive oil to coat. Add half of the lavender mixture and toss to coat evenly. Let cool to room temperature.
  5. Once the nuts have cooled, add the dried blueberries, pears, white chocolate chips, and remaining lavender powder. Toss until well-mixed.
  6. The trail mix will keep in an airtight container at room temperature for up to 1 week.
