Ingredients
for 6 servings
- 1 cup marcona almonds (125 g)
- 1 cup raw cashews (125 g)
- 3 tablespoons dried culinary-grade lavender buds
- 1 tablespoon kosher salt
- 2 tablespoons sugar
- 1 tablespoon olive oil
- ½ cup dried blueberries (70 g)
- ½ cup dried pears (70 g), chopped
- 1 cup white chocolate chips (170 g)

Preparation
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Spread the almonds and cashews in a single layer on the prepared baking sheet. Roast for 15 minutes, until the cashews start to brown.
- In a spice grinder, combine the lavender flowers, salt, and sugar and grind into a soft powder.
- Transfer the roasted nuts to a large bowl and toss with the olive oil to coat. Add half of the lavender mixture and toss to coat evenly. Let cool to room temperature.
- Once the nuts have cooled, add the dried blueberries, pears, white chocolate chips, and remaining lavender powder. Toss until well-mixed.
- The trail mix will keep in an airtight container at room temperature for up to 1 week.
