Ingredients

for 12 muffins

  • nonstick spray
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 large egg
  • 1 ½ cups milk of choice
  • 3 tablespoons honey or monk fruit sweetener
  • 2 tablespoons melted butter or oil
  • 1 ½ teaspoons vanilla extract
  • ½ cup shredded cheddar cheese (optional)
  • 6 fully cooked chicken or turkey breakfast sausage links, chopped into bite-sized pieces (3½ ounces total)

Preparation

  1. Preheat the oven to 350°F (180°C). Coat a 12-cup muffin tin with nonstick spray.
  2. In a medium bowl, mix together the flour, baking powder, cinnamon, and salt until well combined. Form a well in the center.
  3. Add the egg to the well and whisk the egg to break it up. Add the milk, honey, melted butter, and vanilla. Mix until the batter is just combined. Fold in the cheese until incorporated.
  4. Pour the batter into the prepared muffin tin. Divide the sausage evenly into each cup, gently pressing the sausage into the batter until covered.
  5. Bake for 20-25 minutes, until golden brown.
  6. Serve with maple syrup, and enjoy!
