Ingredients
for 6 servings
- 1 750-ml bottle of red wine
- 1 whole cinnamon stick
- 5 whole cloves
- 3 whole star anise pods
- ¾ cup sugar
- 1 blood orange, sliced
- 6 Bosc pears, peeled
For Serving
- 1 pt vanilla ice cream
- ¼ cup crushed pistachios

Preparation
- Add the wine, cinnamon stick, cloves, star anise pods, sliced orange, and sugar to a medium pot.
- Place the pears in the pot. Bring to a boil over medium heat, then reduce the heat to medium-low and simmer, turning the pears as needed to submerge evenly, until they absorb the poaching liquid, about 15 minutes.
- Remove the pears from the poaching liquid and place upright on a plate. Transfer to the refrigerator to cool for 5-10 minutes.
- Meanwhile, continue to reduce the poaching liquid over medium-low heat for about 5 minutes, or until thickened to your liking.
- Place each pear in a shallow serving dish, along with a scoop of ice cream, a drizzle of the reduced poaching liquid, and a sprinkle of crushed pistachios.
