- 5 cups brussels sprouts (500 g), halved
- 4 tablespoons unsalted butter
- 1 cup smoked bacon lardons (250 g)
- 3 garlic cloves, chopped
- 1 ½ cups walnuts (150 g), chopped
- 1 teaspoon honey
- ½ cup grated parmesan cheese (55 g)
- ¼ cup olive oil (50 mL)
- 1 cup shallots (100 g), chopped
- 1 teaspoon cracked black peppercorn

Preparation
- Add the butter and oil to a frying pan on a medium heat and then add the chopped garlic and shallots, sweat for 4 minutes
- Add the bacon lardons and cook through for another 4 minutes
- Add the Brussels sprouts, walnuts, parmesan cheese and pepper and saute for 15 minutes or until the sprouts are soft to the bite
