Banana Sugar-Free Microwave Cake

Ingredients

for 2 servings

  • 1 ripe banana, mashed
  • 1 egg
  • 1 tablespoon oil
  • 1 ½ tablespoons organic cacao powder
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 tablespoon honey
  • 2 whole dates, chopped (if pitted - remove seeds)
  • 2 tablespoons pecan
  • ¼ cup all purpose flour (30 g)
  • ½ cup milk (120 mL), soy recommended

Preparation

  1. Mix together banana and egg. Then, add oil/butter, cacao powder, baking powder, cinnamon and honey and mix together.
  2. Add ¾ of your chopped dates and pecans, then add all-purpose flour and mix well.
  3. Add milk and mix until well-combined. Then, add remaining chopped dates and pecans on top (Do not mix).
  4. Place batter in 2 greased ramekins and microwave for 3 minutes.
  5. Remove, puncture with a fork 3-4 times, then microwave again for 3 minutes.
  6. Serve warm.
