- 1 bulb of garlic
- 1 tablespoon olive oil
- kosher salt, to taste
- freshly ground black pepper, to taste
- 2 cups shredded rotisserie chicken
- 1 ½ cups shredded mozzarella cheese, divided
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 8 oz cream cheese
- 4 oz unsalted butter, melted
- chopped fresh Italian parsley, for garnish

Preparation
- Preheat the oven to 375°F (190°C).
- Cut off the top of the garlic bulb and place it cut-side up in a small baking dish. Drizzle with the olive oil and season with salt and pepper. Cover and roast for 20 minutes.
- Meanwhile, in a medium bowl, add the chicken, 1 cup mozzarella cheese, heavy cream, Parmesan cheese, cream cheese, and melted butter. Mix until well combined.
- Pop out the roasted garlic cloves from the bulb and add to the chicken mixture; mix well, then transfer to a large baking dish and spread evenly. Top with the remaining ½ cup mozzarella cheese.
- Bake for 20-25 minutes, until the cheese is bubbly and golden.
- Garnish with parsley and serve with your favorite dipping snack.
