Chicken Fried Rice

Ingredients

for 1 serving

  • 1 tablespoon cooking oil, of preference
  • 1 clove garlic, minced
  • ¼ cup (35 g) white onion, diced
  • 1 carrot, sliced
  • ¼ cup (45 g) frozen corn
  • ¼ cup (35 g) frozen peas
  • 1 cup (230 g) brown rice, cooked
  • 1 cup (125 g) rotisserie chicken, shredded
  • 1 egg, scrambled
  • 1 tablespoon soy sauce
  • ½ tablespoon sesame oil
  • salt, to taste
  • pepper, to taste
  • green onion, for garnish
  • sesame seed, for garnish

Preparation

  1. In a large skillet heat oil over medium heat. Add garlic, onion, carrot, corn, and peas. Cook until carrots are tender, stirring occasionally.
  2. Add brown rice, chicken, egg, soy sauce, sesame oil, salt, and pepper to taste, and stir. Cook for another minute, or until everything is heated thoroughly.
  3. Serve with a sprinkle of sesame seeds and green onion.
  4. Enjoy!
