Kenyan Masala Chips

Ingredients

  • 2 tablespoons vegetable oil
  • ¼ medium red onion, finely chopped
  • 1 medium tomato, diced
  • 1 serrano chile, seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 ½ teaspoons garam masala
  • ¼ teaspoon turmeric
  • ½ teaspoon ground cumin
  • 1 teaspoon lemon juice
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 lb cooked French fries (455 g), hot
  • kosher salt, to taste

Preparation

  1. Heat the oil in a large pan over medium-high heat, then add the red onion and cook for 5 minutes, until browned.
  2. Add the tomato, serrano, and garlic. Stir well, cover, and cook for 5 minutes, until the tomatoes have softened.
  3. Add the garam masala, turmeric, and cumin. Stir, reduce the heat to medium, and cook for another 10 minutes, or until the spices are fragrant and the tomatoes have broken down into a sauce.
  4. Stir in the lemon juice and cilantro, then add the fries and salt. Toss well to coat. Serve immediately.
