Vegan Apple Bread

Ingredients

for 12 servings

  • 1 apple, diced
  • 1 ½ cups flour (185 g)
  • ½ cup sugar (100 g)
  • 2 teaspoons baking powder
  • 1 teaspoon nutmeg
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 1 tablespoon vanilla extract
  • 1 cup apple juice (240 mL)
  • ½ cup applesauce (125 g)
  • 2 flax eggs, 1 flax egg = 1 tbsp chia seeds/flaxmeal + 3 tbsp water mixed, let sit for 5-15 minutes

Preparation

  1. Whisk together flour, sugar, baking powder, nutmeg, and cinnamon. Once mixed, add in vanilla extract, apple juice/cider, and chia/flax seeds. Whisk until smooth.
  2. Fold in diced apple.
  3. Pour batter into a greased loaf pain.
  4. Bake on center rack at 350°F for 50 minutes or until cooked through.
  5. Let cool briefly, then slice and serve.
