Ingredients
for 12 servings
- 1 apple, diced
- 1 ½ cups flour (185 g)
- ½ cup sugar (100 g)
- 2 teaspoons baking powder
- 1 teaspoon nutmeg
- 1 tablespoon ground cinnamon
- 1 tablespoon vanilla extract
- 1 tablespoon vanilla extract
- 1 cup apple juice (240 mL)
- ½ cup applesauce (125 g)
- 2 flax eggs, 1 flax egg = 1 tbsp chia seeds/flaxmeal + 3 tbsp water mixed, let sit for 5-15 minutes

Preparation
- Whisk together flour, sugar, baking powder, nutmeg, and cinnamon. Once mixed, add in vanilla extract, apple juice/cider, and chia/flax seeds. Whisk until smooth.
- Fold in diced apple.
- Pour batter into a greased loaf pain.
- Bake on center rack at 350°F for 50 minutes or until cooked through.
